Berry season is fast approaching! Summer time is the best time of the year to get your hands on these fat free foods. Though it is still spring time, we all are getting our berry fix. Whether it is in a smoothie or breakfast bowl, berries are most used for breakfast or a nice snack. What about berries for lunch? There is no better time to eat berries than to add this treat to a light lunch. Berries have the reputation of being called “brain food.” So why not have this “brain food” with your lunch! You can get your belly full and your brain can get full as well! Here are some facts about berries:

  • Berries are loaded with antioxidants
  • They are rich with plant compound called flavonoids which provide potent health protection
  • reduce inflammation to the brain
  • increase brain cell survival and brain aging
  • Strawberries can be used to treat headaches
  • blackberries contain heart protective vitamin E
  • blueberries reduce muscle damage after a strenuous workout
  • raspberries supply a good dosage of Folic Acid (great for pregnant women)

Here is a delicious recipe from Creme de la Crumb for Berry Pistachio Spinach Salad With Berry Vinaigrette.
  • 6-8 cups baby spinach leaves
  • 1 -1½ cups berries of choice (I used ⅓ cup each blueberries, raspberries, and blackberries – strawberries are great too)
  • ¼ red onion, thinly sliced into rings
  • ⅓ cup blue cheese crumbles (OR feta cheese crumbles)
  • ⅓ cup shelled Diamond of California Pistachios
Dressing Ingredients
  • ¾ cup fresh or frozen berries of choice (I used a combination of blueberries, raspberries, blackberries, and strawberries
  • ⅔ cup extra virgin olive oil (or vegetable oil)
  • ¼ cup apple cider vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1-2 tablespoons honey
  • ¼ cup cold water

  1. To make the dressing, pulse all ingredients in a blender or food processor until smooth. Cover and chill until ready to serve.
  2. When ready to serve the salad, in a large bowl toss together spinach, berries, red onions, cheese crumbles, and pistachios. Serve with prepared dressing.
This is the perfect lunch and perfect time to get your brain food fix! Enjoy this salad, your brain will thank you for it!
