Summer is officially here and it’s time for us to get our summer bodies into tip-top shape. If you’re looking for a low-cal meal or just something new and tasty to try this summer, here are 3 tasty summer salad ideas you can make at home.

Pepperoni Pizza Pasta Salad

You’ll Need: 3 cups uncooked Rotini pasta, 1 cup mini Pepperoni slices, ½ cup sliced black olives, 1 green bell pepper, diced, 1 cup grape tomatoes, quartered, 1 cup fresh mozzarella, diced into cubes, 1 cup pizza sauce OR ½ cup Italian dressing

  1. Boil pasta until tender, drain and set aside to cool in a large serving bowl.

  2. Prepare the toppings and toss into the cooled pasta.

  3. Toss the pasta mixture with pizza sauce OR Italian dressing if you prefer it.

  4. Serve immediately or cover and refrigerate until ready to serve.

Cucumber Vinegar Salad

You’ll Need: 2 English cucumbers, thinly sliced, 1/2 tablespoon salt, 1/2 cup apple cider vinegar, 1/4 cup water, 2 tablespoon granulated sugar, 1/2 teaspoon fresh chopped dill, 1/2 red onion, thinly sliced

  1. Place cucumbers in serving dish. Sprinkle with salt.

  2. Cover and refrigerate for 2 hours.

  3. Pour off the liquid (do not rinse).

  4. Meanwhile, combine vinegar, water, sugar and dill in a small saucepan.

  5. Warm over medium heat just until sugar is dissolved.

  6. Add onion to cucumbers.

  7. Pour vinegar mixture over cucumbers and onion.

  8. Toss to combine.

  9. Refrigerate overnight.

Watermelon Mint & Goat Cheese Salad

You’ll Need: 4 cups watermelon, cubed, 6 mint leaves, minced, 1/3 cup aged goat cheese, crumbled, 1 lime juiced. Toss all ingredients together into a large bowl.
